with ox tongue and cheek, winter greens, trompettes, parsnip fondant,
black truffle & celeriac puree, red wine & thyme jus

DESSERT
A Valentine’s entremet of Valrhona white and dark chocolate
with new season confit rhubarb, champagne jelly
and finished with strawberries and gold leaf
