Job Title:
Head Sommelier
Salary on offer
Negotiable commensurate with experience (£30-33k + benefits)
About the Position:
As Head Sommelier at the Art School Restaurant you will be the main point-of-contact for wine in the restaurant, managing and developing our collection of approximately 320 wines. Working closely with the Chef Patron you will assist in further developing our dynamic and unique AA Notable wine list to complement our menus. Boasting a generous knowledge of wine, spirits and any other beverages, you should also demonstrate a passion for all things hospitality-led. This position would be ideal for a young, ambitious Assistant Sommelier looking to step up.
You will report to the Chef Patron and Restaurant Manager.
Hours – 45 per week as required.
Your skill set should include
- Professional training to WSET level 3 will be viewed favorably, alongside experience working with wines in a 2/3 rosette level dining establishment
- Excellent communication and customer service skills (internal and external)
- Ability to manage costs and reach targeted financial goals
- Attention to detail at the highest, Michelin star level
- Solid time management, organization, follow up and prioritization skills
- Ability to construct and deliver beverage training programmes to junior team members
Your main duties will include:
- Offering assistance to guests by helping them choose wines that complement their food choices
- Work with the Chef Patron in wine & food pairings, to develop the content and to manage the growth of the wine collection
- Manage the cellar stock ordering, stock levels and upkeep of the wine cellar in accordance with company policy and to maximise sales to achieve GP targets
- Working within a busy, ambitious restaurant team, serving guests in the restaurant, cellars bar or private dining rooms with wine, water and drinks orders when required
- Developing our supplier and brand partnerships such as Charles Heidsieck, Antinori, Henners & Conseil Interprofessionnel du Vin de Bordeaux (CIVB)

Chef de Rang
Salary on offer
Negotiable commensurate with experience (£28-30k, share of gratuities + benefits)
About the Position:
As a Chef de Rang at the Art School Restaurant you will be expected to arrive on time, be immaculate in terms of appearance and ready to provide a service that goes over and above to exceed the expectations of the guest. You will possess excellent interpersonal skills and have the ability to quickly build rapport with guests from all backgrounds & levels of society. You should possess excellent time management skills, the desire to learn and develop within your role and thrive in a fast-paced service-driven environment.
You will report to the restaurant management team & Chef Patron.
Hours – 45 per week as required.
Your skill set should include
- Experience of luxury, fine dining restaurants would be ideal, however having a great attitude and strong restaurant knowledge is essential
- You have a keen eye for detail, an organised approach and willingness to exceed guest expectations

Your main duties will include:
- Delivering a warm and memorable fine dining experience for all our guests
- Ensuring that the restaurant, bar and back-of-house are organised before and during service to the highest of company standards.
- Having full knowledge of all bookings and guest arrivals for each service, be up-to-date with menu changes and maintain a high knowledge of the menu items.
- Have the ability and confidence to up-sell wines and spirits and work with the Sommelier/Restaurant Manager in order to improve drinks knowledge
- Guiding commis waiting-on staff during service and ensure good productivity.
- Ensuring all items consumed by guests are correctly charged and input into the EPOS system in accordance with the company procedures and to handle all transactions with diligence, honesty and integrity.

Cellars Bar Manager

About the Position:
As manager at the Art School Restaurant Cellars Bar you are expected to provide a knowledgeable, first class service to our guests, delivering vibrant and exciting cocktails, fine champagnes, world-class wines and our range of beers to complement our menus. As Bar Manager you will take responsibility for the day-to-day management of a busy bar operation, from afternoon tea service through to post-dinner drinks. Passionate about service and standards you will work hard to make every guest experience is memorable, effectively running your restaurant, ensuring that the standards and procedures, as well as legal requirements, are consistently followed. You will take responsibility for training, coaching and supporting your team in delivering excellent guest service whilst maximising sales opportunities. You will be instrumental in driving feedback from our guests and ensuring the appropriate management reporting as required by the Chef Patron.
You will report to the Chef Patron.

- To competently run the bar area on a day-to-day basis delivering first-class service to bar, afternoon tea, ‘light bites’ and courtyard guests
- Offering assistance to guests by helping them choose wines that complement their food choices demonstrating an excellent knowledge of all beverages in order to up-sell
- You will be expected to show initiative, have a high attention to detail, maintain a high-profile presence during service, establish and promote a regular customer base.
- To assist in the appraisal and delivery of staff training and development.
- To assist the Chef Patron, Restaurant Manager and Sommelier in ordering & management of stock, minimising loss and accurately & efficiently managing date rotation of fresh stock
- Carry out accurate end-of-day cashing up and till reconciliation duties on a rota basis
