Guiding you by the hand of this culinary experience, Nigel, Ronan, and Dimitri will take you on a journey to enlighten your senses course-by-course.

Pan seared Loch Fyne Scallop served in the half shell with Imperial Caviar

on a bed of creamed leeks & Southport potted shrimps

Roast breast of salt aged duck

served with spiced orange puree, pistachio & pomegranate

Nigel Wilkinson MS DipWSET is the Brand Ambassador & Senior Wine Educator for Boutinot (vineyard owners and wine producers in England, France, Italy & South Africa).

Nigel passed the WSET Diploma in 1996, he became a Master Sommelier in 2005 and now teaches and examines for both the Wine & Spirit Education Trust and the Court of Master Sommeliers.

Before entering the wine trade, he was named ‘UK Young Wine Server of the Year’ and was also twice runner-up in the ‘UK Sommelier of the Year Competition’. Nigel is regular judge for the Academy of Food & Wine Service UK based competitions, the Chaine des Rotisseurs Young Sommelier Competition, the Decanter World Wine Awards, The International Wine & Spirit Challenge and TEXSOM.

Nigel has also worked during the harvest in wineries located in the Yarra Valley & Pipers River (Australia),  Gevrey Chambertin (France) and East Sussex (England).

As a Master Sommelier (one of only 214 in the world), Ronan is a previous winner of the UK Sommelier of the Year competition and twice a representative for the UK in the European Sommelier Competition. He is a regular judge for the Sommelier of the Year Competition and various tasting competitions (including the Decanter World Wine Awards) and an examiner for the Court of Master Sommeliers.

Ronan has formally worked for the Gordon Ramsay Group as Executive Head Sommelier for 8 years, mainly in the 3 Michelin star Royal Hospital Road plus created the wine lists and trained wine service teams for Claridge’s, the Connaught, the Savoy, Boxwood Café, Maze and several overseas operations including Dubai, Tokyo and New York.

Dimitri Mesnard MS is the International Brand Ambassador for Jackson Family Wines, which he joined in 2008.

Mesnard started working in the wine trade in his native France, completed his sommelier training in the Loire Valley and moved to the UK in 1996 to join the two Michelin-star Le Manoir aux Quat’Saisons as a sommelier.

In 1998, Mesnard joined Hotel du Vin as head sommelier in Tunbridge Wells, later becoming the group’s food and beverage manager in 2005, and working under the mentorship of Henri Chapon MS and Gerard Basset MS MW. During his time at Hotel du Vin, Mesnard pioneered the Ecole du Vin wine school.

He achieved his MS qualification in 2003, has been chairman of the European Court of Master Sommeliers since 2009. He is keen to share his knowledge, often helping friends and colleagues advance in the world of sommeliers.
